Avocado Pasta for One (Without Food Processor)

Baking is still my favourite but I'm trying to cook more! It's one of my 2016 New Years Resolutions so why not start earlier? ;)

Vegan (dairy-free, egg-free), Nut-free, refined-sugar free, soy-free


This is my rendition of this avocado pasta recipe. 

Ingredients:

85g uncooked pasta (use gluten-free, if desired)
1 garlic clove (adjust to taste)
1 tsp extra-virgin olive oil, plus more if needed
1/2 ripe medium avocado, pitted
1 tbsp lemon juice (optional/adjust to taste)
1/4 tsp fine-grain sea salt (adjust to taste)
Topping: Herbs (of your choice), pepper etc.

Directions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the instructions on the package. 
  2. While the pasta cooks, make the sauce: chop the garlic until fine and place in medium bowl. 
  3. Add the lemon juice(optional), oil and avocado flesh and mash (I used the back of a wooden spatula) until smooth. If the sauce is too thick, add a bit more oil. Season with salt and pepper to taste.
  4. Drain the pasta and place it back in the pot. Add the avocado sauce and stir until combined. You can gently rewarm the pasta if it has cooled slightly, or simply serve it at room temperature.
  5. Top with pepper, herbs, fresh basil leaves, if desired.

Note: It's best to eat/use the sauce immediately. Avocado (and most fruits) oxidise in the air quickly hence the sauce shouldn't be stored. If there is leftover sauce, refrigerate in an airtight container for up to 1 day.

The pasta was creamy and the garlic taste really came out in this dish. I used 1 clove of garlic but you can use less if you desire.

Feel free to use different kinds of pasta! Just make sure to follow the cooking instructions of the pasta that you use.
